
Located in Fleurie, in the heart of the Crus of Beaujolais, Domaine des Chaffangeons is a wine institution that honors a rich heritage. Founded in 1955 by Mr. Depardon, the estate has been passed down through generations and now spans 17 hectares, compared to 7 at its inception. This evolution allows for a wide range of wines, including various cuvées of Fleurie as well as renowned appellations such as Morgon, Moulin-à-Vent, and Beaujolais Blanc. The estate also offers unique creations, such as Crémant de Bourgogne, the sparkling rosé “La Bulle en Rose,” and the sweet white wine “L’Antidote.”
The family’s passion for the vine is at the heart of their concerns, with a constant commitment to preserving and enhancing the terroir. About 80% of the harvest is done manually, with grapes carefully destemmed to avoid the herbaceous flavors from the stems. The winemaking process is based on principles of quality and respect for the environment. Fermentation lasts about ten days and is closely monitored to optimize the extraction of aromas and color, particularly for Gamay. Once fermentation is complete, the red wines rest in concrete tanks before racking and bottling in April of the following year. For white wines, the grapes are pressed as soon as they arrive at the winery, and the juices ferment for about twenty days.
