Lucie Thiéblemont moved to Chablis several years ago to join her partner Charly Nicolle at the family domaine, Domaine Paul Nicolle! Lucie, who is originally from Champagne, and Charly bought a very old plot of Pinot Noir just north of Chablis, with the aim of creating magnificent Crémant de Bourgogne. Haute-couture Crémants, made in Yonne under the best of auspices: a 100% Burgundian terroir, coupled with a Champagne climate, so conducive to racy sparkling wines!

Over the last few years, the domaine has expanded. To our delight, the couple decided to add Chablis wines to their portfolio. As a result, the domaine now vinifies a magnificent Chablis village at friendly prices, a huge Chablis Premier Cru Les Fourneaux with an unbeatable RQP and the prestigious Chablis Premier Cru Mont de Milieu. Currently undergoing organic conversion, the domaine will be certified in 2025.
