Description
The Fleurie Vieilles Vignes from Domaine des Chaffangeons is an exceptional wine, made from vines that are 60 to 100 years old. These old vines, although not very productive, are a reflection of the richness and finesse of the terroir. With age, they produce fewer grapes, but their smaller berries are so precious, offering a wine of great concentration and remarkable aromatic complexity. Each sip is a testament to ancestral know-how and a deep respect for the land.
Production: after destemming and a long maceration (between 13 and 15 days), the resulting wine is more concentrated. A passage in oak barrels, on barrels that have contained 2-3 wines, only for white wines, is carried out to bring roundness and richness.
Tasting: intense and captivating bouquet of red fruits, such as cherry and raspberry, blend harmoniously with spicy and peppery notes, creating a rich and nuanced olfactory palette. On the palate, the wine reveals powerful and supple tannins, offering a velvety texture that envelops the palate. The harmony between the richness of the fruit and the spicy aromas continues in a pleasant and persistent finish.
Pairings: it goes perfectly with tasty dishes, such as game in sauce or goat cheese with a strong taste, making every meal memorable and convivial.
