Description
Production: organic, from 40-year-old vines. Cold pre-fermentation maceration, spontaneous fermentation (indigenous yeasts), at controlled temperature, ageing on file lees in an oak cask (1/3 new, 1/3 1-year old, 1/3 2-year old).
Non-filtered, no additives.
Tasting: aromas and flavours of cherry, strawberry, moka, spice. Nice texture, long finish.
Pairings: braised meats, root vegetables, duck, veal, roasted poultry.
