Domaine Elodie Jaume was created in 2017, from a division of the famous family property in Châteauneuf-du-Pape since 1826.
The audacity and willingness to sign her own wines led Élodie, a young winegrower, to cultivate 5 hectares of the family plots. Her open-mindedness and thirst for discovery led her to take off and vinify for 6 months at the Cooper Mountain estate in Oregon, USA. On her return to Châteauneuf-du-Pape, organic farming and biodynamic practices are an obvious way to express the full identity of these great terroirs. On the northern slopes of the Cabrières plateau, her old Grenache and 70-year-old Mourvèdre vines sink deep into a sandy-clay soil with rolled pebbles. These two great Rhône grape varieties express all their purity, finesse and freshness. Herbal teas and biodynamic preparations are applied rigourously, plot by plot. These enhance the life and vitality of the soil and plants.
From the outset, in order to better understand the intrinsic identity of each of its 8 plots, she makes the choice to separate the grapes in small vats. Very quickly, Élodie decided to vinify the wine as naturally as possible. No oenological input is used except SO2, which is not prohibited but introduced in very small quantities. Maturing in concrete vats gives the wines a fine tannic structure, delicacy and freshness.
