Description
Production: organic, Ecocert-certified and Biodynamic, Demeter-certified. Hand-harvested grapes from a plot located exclusively in the Bois Lauzon area of Orange. Soils of Miocene sand and saffron, with a contribution from the ancient Terrasse du Wüm carrying rolled pebbles. Hand-harvested, sorted on the harvest table on arrival at the winery, cold pre-fermentation maceration (18 – 20 C). Fermentation in 10hl stoneware jars for 7 days. Aged for 7 months in stoneware jars. Bottled without fining or filtration.
Tasting: Cinsault at its most seductively pure. A fruity, floral perfume unfurls in a corolla, announcing a lacy mouthful, just peppery and minty.
