Description
The name “Mont de Milieu” takes us back to ancient times, when Chablis belonged to the county of Champagne. The border with the Duchy of Burgundy ran through this hill on the right bank of the Serein, where the famous Premier Cru now flourishes. This climat brings together our oldest vines, aged between 50 and 60 years. Their juice is distinguished by its aromatic complexity, mineral intensity, and exceptional depth.
Production: Temperature-controlled alcoholic fermentation (between 16 and 18 degrees) followed by 100% malolactic fermentation. Aged in stainless steel vats then in oak barrels (400L demi-muids) for 12 to 16 months.
Tasting notes: Straw yellow color, bright and clear. The nose is delicate with pure aromas, dominated by floral notes from its clay-limestone soil and a bouquet of acacia… The palate expresses the mineral character of the terroir, complemented by ripe fruit aromas. The richness offers a long, complex finish full of finesse.

Pairings: Seafood, fish, poultry, and cheese dishes.
