Spontaneous fermentation (indigenous yeasts) at controlled temperature in oak casks and barrels, aged on fine lees.

Tasting notes: a dry, balanced, full-bodied wine with notes of stone fruit and flowers. The Pinot Gris brings power, the Gewurztraminer brings fruitiness and the Riesling brings freshness.
