Description
A sparkling wine produced using the classic method, with a varietal profile of Chardonnay.
Production: Grapes come from small terraced plots in various steep vineyards. After cluster thinning in July, the grapes are hand-harvested and transported in small crates to prevent grape damage. Delicate pressing of whole clusters in an inert atmosphere prevents oxidation. The first fermentation takes place in thermo-regulated stainless steel tanks. Classic secondary fermentation in the bottle, as prescribed by Trento DOC, follows. Aging on lees for over 24 months preserves the original wine’s fragrance. The “dosage” is kept minimal to maintain the naturally conferred characteristics from highly favorable environmental factors, the mousse formation, and an exceptionally meticulous artisanal production process.
Tasting: Soft straw color with clear green reflections, lively and elegant perlage of tiny, continuous bubbles. The aroma is intense and varietal, accompanied by subtle notes of green apple, lending a particular finesse. The taste is flavorful and savory, while remaining lively and elegant.
Pairing: Perfect as an aperitif and can be enjoyed throughout the meal.
