Description
From five parcels located at the base of the slope, this Morey-Saint-Denis reflects the clay-rich soils and structural character typical of this iconic Côte de Nuits appellation.
Production: Blend of parcels “Les Crais,” “Les Bras,” “Les Cognées,” “Clos des Ormes,” and “Clos Solon,” located at around 240 meters altitude on clay soils scattered with rocky blocks. Vines are trained in single Guyot. Hand-harvested with careful sorting. Cold pre-fermentation maceration for 3–5 days, natural fermentation with indigenous yeasts for 4–5 days, followed by 3–4 days of extraction. 10–30% whole clusters depending on the vintage. Aged for 18 months in 228L barrels with around 25% new oak, with two rackings before bottling without filtration.
Tasting notes: Deep red color. The nose opens with intense fruit aromas in its youth, evolving over time toward animal, leather, and forest floor notes. The palate is structured, broad, and straight, with tannins that soften and gain finesse with aging.
Food pairings: White meats, grilled dishes, roasted poultry, fresh to aged cheeses.
