Therra is a structured and ambitious cuvée, combining the freshness of Sangiovese with the depth of Bordeaux varieties in a precise yet evolving style.
Production: Blend of Sangiovese, Cabernet Sauvignon, and Merlot from 18 hectares of vineyards on clay-limestone soils. Gentle pressing with a portion of whole berries to encourage partial carbonic maceration and enhance varietal expression. Fermentation and maceration for 15 to 25 days in stainless steel or concrete tanks at 25°, with 2 to 3 pump-overs per day. Malolactic fermentation in barriques, followed by ageing for 8 to 10 months in 225-litre oak barrels. Final blending in concrete vats, then 4 to 6 months of ageing before filtration and bottling.
Tasting notes: Deep ruby colour with dark reflections. The nose reveals ripe black fruit aromas, raspberry and blackberry, along with woody notes and balsamic nuances. The palate is structured, medium to full-bodied, with vibrant acidity and firm yet elegant tannins. The profile is straight, precise and complex, with a long, persistent finish.
Food pairing: Ideal with grilled meats, stews, game dishes, rich pasta sauces, or aged cheeses. Also highly suitable for ageing.
