Description
From one of the most emblematic terroirs of the Côte de Nuits, this Gevrey-Chambertin expresses the power and longevity of an appellation renowned for its structured and profound wines.
Production: Vineyard located between 240 and 280 meters altitude in the communes of Gevrey-Chambertin and Brochon, on typical hillside soils. Vines are trained in single Guyot. Hand-harvested with sorting at the winery. Cold pre-fermentation maceration for 3–5 days, fermentation with indigenous yeasts for 4–5 days, followed by 3–4 days of extraction. 10–30% whole clusters depending on the vintage. Aged for 18 months in 228L barrels with around 25% new oak, with two rackings before bottling without filtration.
Tasting notes: Deep red color. The nose is complex, dominated by red and black fruits in its youth, evolving toward animal, leather, and spice notes with age. The palate is powerful, tannic, and ample, with a structure that softens and gains finesse over time.
Food pairings: Roasted meats, game, beef cuts, aged cheeses.
Alcohol : 12,5%
Ageing potential : 5 – 10 years
