Description
Production: Certified organic and biodynamic. Hand-picked from vines averaging 15 years old. Sorting in the vineyard followed by a second table sorting. Whole bunch direct pressing. Fermentation for 20 to 25 days in temperature-controlled stainless steel tanks. Native yeast. Malolactic fermentation in vats. Clarification in the cellar over winter. Aged 7 months in concrete or stainless steel vats. Bottled without fining or filtration.
Tasting notes: Grenache Blanc and Clairette in equal measure for a Southern white that’s sappy, salty, full of chewiness and zest, characterized by its density, freshness and salivating bitters on the finish. A wine that lends itself equally well to moments of conviviality and sophisticated pairing, with a complexity that will stand the test of ageing!
