Description
Production: The plots are located exclusively in the Cabrières area of the commune of Orange, on Miocene sand and safre soils on the northern slopes of the Cabrières plateau. Hand-picked in crates with sorting in the vineyard, followed by a second sorting on a sorting table. Direct pressing of whole bunches. Fermentation for 20 to 25 days in stainless steel vats with temperature control on fine lees. Indigenous yeasts. Malolactic fermentation in vats. Aged for 7 months in concrete or stainless steel vats. Bottled without fining or filtration.
Tasting notes: Bright pale yellow. This wine has a typically Mediterranean aromatic profile, blending herbs from the maquis, menthol, fennel and nuances of aniseed and dill, in a spirit that is fully Châteauneuf. The blend of Clairette and Grenache Blanc produces a highly digestible, lively Châteauneuf, with notes of white fruit, citrus and white flowers.
Pairing: Risotto with shellfish, grilled sea bream, chicken with lemon thyme sauce.
