Description
The Venetian winemaking tradition, illustrated by the venerable local history of Cabernet, is fully expressed in this wine. The ideal accompaniment to grilled meat or mature cheeses.
Production: clones of Cabernet, grown exclusively in the Collalto vineyards near the Piave River. After the grapes are destemmed and pressed, the wine ferments and macerates on the skins for 10-12 days, then undergoes spontaneous malolactic fermentation, followed by filtration and maturation. Aged in large 100 hl barrels for 12-18 months, then in the bottle for 3-6 months.
Tasting: a youthful, heady ruby-red, full volumed and luminous, that classically assumes tones of garnet with the passing of the years. The nose boasts the typical Cabernet herbaceousness, followed by crisp raspberry and an intriguing impression of sweet violets. The palate, full-bodied and dry, exhibits an appreciable balance between tannins and a supple mouthfeel, and concludes with a well-calibrated finish laced with smooth fruit.
Pairings: grilled meat, meat stews and medium-aged cheeses as well.
