Description
Cybèle Rouge embodies the depth and elegance of the Terrasses du Larzac. Crafted from the iconic trio of Mourvèdre, Syrah, and Grenache, it combines power, finesse, and impressive ageing potential.
Production: Blend of 45% Mourvèdre, 45% Syrah, and 10% Grenache from entirely hand-harvested grapes. Aged for 18 months in ovoid concrete vats, a method that enhances aromatic precision, silky tannin texture, and purity of fruit expression. Best enjoyed within 5 to 10 years of harvest.
Tasting Notes: Deep and intense garnet-red colour. The nose reveals aromas of ripe black fruits and black cherry, complemented by notes of violet, spice, and cocoa. The palate is ample and juicy, featuring generous flavours of cherry and peppery blackberry that evolve into delicate hints of vanilla and cocoa. The tannins are silky and well-balanced, with excellent potential for further development in bottle.
Food Pairing: Delicious as an aperitif with tapenade, it pairs perfectly with beef tournedos, duck breast, or mildly spiced dishes such as lamb tagine with dried fruits or Thai-style beef stir-fry.
