Description
The vineyard stretches from the limestone hills of Patrimonio to the schist slopes of the Cap Corse mountain range. This is where the Minera vineyard is located. A parcel-by-parcel cuvée made from grapes grown on these slopes in search of their minerality. To avoid altering this terroir, the wine is vinified and aged on fine lees in natural cement eggs (clay and limestone). Unaltered. Unfiltered. The wine is full-bodied, intense and expressive of minerality. A final saline note marks the signature of this parcel-based cuvée.
Production: Selection of old vines. Grapes are sorted and only healthy, ripe bunches are picked. Manual sorting of the harvest. Fermentation. Aged 10 months in natural cement eggs (clay and limestone). Unaltered. Unfiltered.
Tasting notes: Intense fruit aromas (red berries, blackberries…). Supple tannins. Freshness on the finish. Drink young for its freshness, or after a few months’ cellaring, when its tannins melt and it evolves towards even greater aromatic complexity (animal notes, etc.).
Pairings: Meats, cold meats, dishes in sauce.
