Description
From the lieu-dit “En la Verde,” north of Marsannay, this wine reflects a highly draining, well-ventilated terroir that produces structured, precise, and expressive Pinot Noir.
Production: Parcel located at the entrance of the valley leading to Corcelles-les-Monts, on clay-limestone soils rich in stones. East-facing exposure and a windy microclimate promote healthy, concentrated grapes. Vines are trained in single Guyot. Hand-harvested with sorting at the winery. Cold pre-fermentation maceration for 3–5 days, followed by 4–5 days of fermentation with indigenous yeasts, then 3–4 days of extended extraction. 10–30% whole clusters depending on the vintage. Aged for 18 months in 228L barrels with around 25% new oak, with two rackings before bottling without filtration.
Tasting notes: Deep red color. The nose is complex, showing red and black fruit in its youth, evolving toward more animal and spicy notes with age. The palate is structured, straight, and dense, with present but balanced tannins and good depth.
Food pairings: White meats, grilled dishes, roasted poultry, aged cheeses.
