Description
Count Rambaldo VIII, a wise and valiant knight, constructed the San Salvatore castle in the 12th century, which majestically overlooks the vineyard-covered San Salvatore hill. His solid and rigorous character is reflected in this wine, a blend of Cabernet, Merlot, and Refosco grapes, which have been synonymous with the Collaltos’ viticulture history since the Middle Ages
Production: made with late-harvested grapes. After the grapes are destemmed and pressed, the wine ferments and macerates on the skins for 15-20 days; it then undergoes malolactic fermentation, followed by filtration and maturation. Maturation: 48 months in 5hl tonneaux and large 40hl oak barrels, followed by 8-12 months in the bottle in the cellar.
Tasting: Orange-flecked ruby red. Scents of wild berry fruit, along with impressions of black liquorice, cocoa powder, and Oriental spices. Warm and smooth, harmonious and well balanced, with the perfect level of tannins.
Pairings: This wine complements grilled meats such as pork, sausages, and ham, and enhances the flavors of any game dish. It also pairs beautifully with aged and full-flavored cheeses.
