The Free Expression of the Languedoc
In the heart of the Languedoc’s wild landscapes, Domaine Virgile Joly stands out for its authenticity, commitment, and the precision behind every cuvée. Founded in the early 2000s by Virgile Joly, a former sommelier who honed his craft in some of France’s finest Michelin-starred restaurants, the estate was born from a deep desire: to return to the land and produce honest wines that faithfully reflect their environment.
Today, the vineyard spans approximately 28 hectares across the renowned terroirs of Saint-Saturnin and Jonquières, in the heart of the Terrasses du Larzac appellation. Schist, limestone, and rounded pebble soils, combined with the region’s elevation, provide ideal conditions for crafting wines that are both fresh and structured.
A Committed Approach to Viticulture
From the very beginning, Virgile Joly embraced a demanding organic farming philosophy, certified since 2010. Vineyard work is meticulous, respectful of natural balances, and focused on low yields in order to reveal the full complexity of Mediterranean grape varieties, including Grenache, Syrah, Carignan, Mourvèdre, as well as Vermentino (Rolle) and Roussanne for the whites.
In the cellar, the approach remains deliberately minimalist. Winemaking is low-intervention, allowing the fruit and terroir to express themselves with clarity and precision. Aging, often carried out in tanks or neutral oak, is designed to preserve freshness and aromatic purity rather than imprint the wines with excessive oak character.

The wines of Domaine Virgile Joly embody the richness of the modern Languedoc: generous without excess, structured yet always lifted by a welcome freshness. Each cuvée reflects a constant search for balance between Mediterranean warmth and finesse, a hallmark of the great terroirs of the Larzac.
