NicoLeo is a refined and textured white wine, combining precision and aromatic richness, grown on soils rich in marine fossils that bring tension and minerality.
Production: Blend of Grechetto and Chardonnay grown on stony and sandy soils rich in fossilised shells. Gentle pressing followed by static settling at low temperature (5°–6°) in stainless steel tanks. 80% of the wine ferments in stainless steel for 10 days at 14°, while 20% ferments in barriques at 18°–20°, followed by ageing on lees with bâtonnage for 6 to 8 months before blending and bottling.
Tasting notes: Bright yellow colour with golden reflections and good intensity. The nose opens on fresh citrus notes, crunchy almond, and subtle honeyed hints. The palate is ample and elegant, with a slight buttery sensation, perfectly balanced by bright acidity and a saline backbone that extends the finish.
Food pairing: Ideal with grilled fish, seafood, creamy risottos, roasted poultry, or semi-soft cheeses.
